Pancake Day 2021 is just a few short days away, so now’s the time to check the store cupboards and make sure you’ve got everything you need to whip up a batch of everyone’s favourite Fat Tuesday treat.
But why not think a little bit outside the box this year when it comes to your crepes and try an alternative recipe or two? We’ve had a quick look down the back of the internet and found all sorts of tasty recipes that could tickle your tastebuds on February 16th. Let us know which ones you try!
Banana oat pancakes
This BBC Good Food recipe sounds all kinds of delicious to us - and you can enjoy them guilt-free since they’re not just yummy but healthy too. You’ll need oat milk, eggs, banana, rolled oats, low fat yoghurt and fruit, as well as some baking powder and a bit of vanilla extract. Perfect!
Sweet potato pancakes
Looking for something a little more filling? These vegan sweet potato pancakes by Deliciously Ella sound great, using sweet potato (obviously!), oat milk, brown rice flour, honey and ground cinnamon. They’re a bit more involved to make so give yourself enough time to get the job done but they’re sure to impress everyone around the dinner table.
Carrot cake pancakes
Cake for breakfast! That’s what we like to hear! For this recipe, you’ll need plain flour, brown sugar, milk, carrots, raisins, ground cinnamon, baking powder and an egg. If you want to serve it with cream cheese frosting (and who wouldn’t want to do that?), you’ll need some cream cheese, cream, sugar and vanilla extract.
